Apple Crisp for One
This gluten-free and vegan Apple Crisp for One is delicious and simple to make.
Apple crisp is one of my favorite desserts. I make it all the time. The only problem is I make a tray of it, and when I eat it the next day, the crisp is no longer crispy. It gets a bit soggy overnight. Well, problem solved! Apple Crisp for One leaves no leftovers to get soggy.
Apple crisp is the perfect dessert for an All-American Fourth of July, or Thanksgiving, or just a Tuesday night. This recipe is perfect for any of those occasions.
The apples are soft, sweet, and flavorful. The crumble topping is crisp and (vegan) buttery.
How to make Apple Crisp for One:
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
To make the apple filling:
Peel and slice an apple.
In a small bowl, add apple slices, brown sugar, and cinnamon. Mix together.
To make the topping:
In another small bowl, melt butter in the microwave for 15 seconds. I use Earth Balance for a good vegan buttery spread. You could alternatively use coconut oil.
Add oats, almond flour, brown sugar, cinnamon, and apple pie spice. Mix until incorporated. Add pecans.
To assemble:
Add apple mixture to ramekin or small oven-safe bowl. Fill to the top with apples. It will sink a bit once the apples are cooked and it cools out of the oven.
Add topping.
Bake for 25-28 minutes. The apples should be bubbling and the topping should be crispy.
Let cool for a few minutes. Top with a scoop of vanilla ice cream. Enjoy!

Ingredients
- 1 Apple
- 2 tbsp Brown sugar
- 1/4 tsp Cinnamon
- 1 tsp Butter (melted) or coconut oil
- 2 tbsp Oats
- 1 tbsp Almond flour
- 1/8 tsp Apple pie spice
- 1 tbsp Pecans
Instructions
- Preheat oven to 375 degrees F.
- Peel and slice an apple into thin slices.
- In a small bowl, add apple slices, 1 tablespoon of the brown sugar, and cinnamon. Mix together.
- Add apple mixture to ramekin or small oven-safe bowl.
- In another small bowl, melt butter in the microwave for 15 seconds.
- Add oats, almond flour, the second half of the brown sugar, cinnamon, and apple pie spice. Mix together. Add pecans.
- Add topping to ramekin.
- Bake for 25-28 minutes, or until apples are cooked through and bubbling and topping is crispy.
- Top with ice cream. Enjoy!
