I have come to love overnight oats for rushed mornings.

Let’s be honest, a breakfast feast is probably the best part of the weekend. Pancakes and waffles with hot maple syrup, bacon, home fries, fruit. But for all the other days of the week when there’s no time to prepare those pancakes and waffles, we need something quick and easy.

No time to prepare breakfast, but don’t want to skip out on the most important meal of the day? It is the most important meal, right? Well, overnight oats is perfect! Prepare it the night before and let it refrigerate overnight (as the name suggests).

How to make overnight oats with freeze-dried strawberries:

Start with the freeze-dried fruit. I normally have fresh fruit, but when I don’t, I use freeze-dried strawberries. They will soak up the milk and rehydrate.

Then, pour oats into the bowl, add milk, and any sweeteners. I like to add maple syrup to sweeten, but you can use honey or agave.

Add cinnamon to taste.

Mix it together, cover with plastic wrap, and refrigerate overnight. (See video below.)

The next morning, add pecans for a crunch. You could also add fresh fruit like sliced banana on top.

And there ya have it, the perfect breakfast for those rushed mornings. You can even prepare it in a jar with a lid for a breakfast on the go.
